Bread Pudding with Chocolate Chips

Bread pudding is a great way to repurpose stale or day-old bread.  You can also prepare the bread pudding the night before and refrigerate it. Just bake it in the morning before serving.

Ingredients
Bread Pudding:
  • 6 cups of day-old bread (French bread, brioche, or challah work well), cut into cubes
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup coconut 
  • 1/2 semi-sweet chocolate chips
Sauce (optional):
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Steps
  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Bread: Place the bread cubes in a large mixing bowl. If the bread is not stale, you can dry it out in the oven for about 10-15 minutes.
  3. Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Combine: Pour the custard mixture over the bread cubes. Gently fold the bread into the custard until all the pieces are soaked. Add coconut and chocolate chips. 
  5. Transfer to Baking Dish: Grease a 9x13-inch baking dish (or similar size) and pour the bread mixture into the dish, spreading it evenly.
  6. Bake: Bake in the preheated oven for about 45-55 minutes, or until the top is golden brown and the custard is set. A knife inserted in the center should come out clean.
  7. Make the Sauce (optional): While the bread pudding is baking, you can prepare the sauce. In a small saucepan, combine the heavy cream, milk, sugar, butter, vanilla extract, and salt. Heat over medium heat until the butter is melted and the mixture is warm, stirring occasionally. Do not boil.
  8. Serve: Once the bread pudding is done, let it cool for a few minutes before serving. Drizzle with the warm sauce if desired.
