Beat the Heat with Refreshing Cold Avocado Soup and Sautéed Crab!

Are you looking for a light and flavorful meal to cool you down during the hot summer months? This easy-to-make recipe is a perfect addition to afternoon tea finger sandwiches and desserts. Serve in martini glasses for an added flair.

Years ago, my friend Kevin was experimenting with recipes and made this soup for me. I was impressed with how easy it was to make and how tasty it was. Now, I make it all the time.

The simplicity of the ingredients and preparation makes it a great choice for busy weeknights or a casual weekend lunch.

Cold Avocado Soup with Sautéed Crab

Ingredients:

• 2 ripe avocados
• 1 cup vegetable broth
• 1/4 cup fresh lime juice
• Salt and pepper to taste
• 1/2 pound lump crab meat
• 2 tablespoons butter
• 1/2 shallot, minced
• 1/2 red pepper, chopped
• 1 clove garlic, minced
• Fresh cilantro (optional)
• Olive oil (optional)

Steps:

  1. In a blender, combine the avocados, vegetable broth, lime juice, salt, and pepper. Blend until smooth and creamy. Add more vegetable broth if needed to reach the desired consistency. The consistency should be slightly thinner than a smoothie. Chill in the refrigerator for at least 30 minutes.
  2. In a skillet, heat butter over medium heat. Add shallots, red pepper, and garlic, and sauté for about 1 minute until fragrant.
  3. Gently add the lump crab meat to the skillet and sauté for 2-3 minutes until heated through. Try to keep the crabmeat lumps intact.
  4. To serve, ladle the chilled avocado soup into bowls and top with the sautéed crab meat.
  5. If desired, garnish with cilantro and a drizzle of olive oil. Enjoy your refreshing and flavorful cold avocado soup with sautéed crab!
