This recipe is a fantastic way to give your leftover corned beef a new lease on life. It's incredibly easy to make, requiring just a few basic ingredients and minimal prep time. Plus, the combination of savory corned beef, crunchy vegetables, and a crispy egg roll wrapper is truly irresistible.

Corned Beef Egg Rolls

1 cup cooked corned beef, chopped
1 cup shredded cabbage
1/2 cup shredded carrots
1/4 cup chopped green onions
1 tablespoon soy sauce
1 teaspoon sesame oil
Egg roll wrappers
Vegetable oil for frying
Steps:

In a large mixing bowl, combine the chopped corned beef, cabbage, carrots, green onions, soy sauce, and sesame oil.

Place a spoonful of the filling onto each egg roll wrapper. Fold in the sides and roll up tightly.

Heat vegetable oil in a deep fryer or large skillet to 350°F (180°C).

Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
