Brunch Like Royalty: Crab Cake Eggs Benedict

Crab cake Eggs Benedict

 

Ingredients:

1 lb lump crabmeat
1/2 cup breadcrumbs
1/4 cup mayonnaise
1 egg, beaten
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon Old Bay seasoning
Salt and pepper to taste
4 English muffins, split and toasted
Butter
8 eggs
Hollandaise sauce
Chopped chives for garnish

 

Steps:

In a bowl, mix together the crabmeat, breadcrumbs, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, and pepper until well combined.

Form the crab mixture into 8 patties and place them on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Bake the crab cakes for 15-20 minutes or until golden brown and cooked through.

Make Hollandaise sauce (see recipe below)

While the crab cakes are baking, poach the eggs in a pot of simmering water for about 3 minutes or until the whites are set but the yolks are still runny.

Toast and butter English muffins

To assemble, place a toasted English muffin half on a plate, top with a crab cake, a poached egg, and a spoonful of hollandaise sauce. Repeat with the remaining ingredients.

Hollandaise Sauce Ingredients:
3 egg yolks
1 tablespoon lemon juice
1/2 cup unsalted butter, melted
Pinch of cayenne pepper
Salt to taste
Steps:
In a heatproof bowl, whisk together the egg yolks and lemon juice until well combined.
Place the bowl over a pot of simmering water (double boiler) and continue to whisk constantly.
Slowly drizzle in the melted butter while whisking vigorously until the sauce thickens.
Remove the bowl from the heat and stir in the cayenne pepper and salt.
