Father's Day Feast: Grilled Picanha Steak with Chimichurri Recipe

Nothing says Father's Day like grilled steak. I found a steak recipe on http://Delish.com that I'm happy to share with you. Picanha Steak is a Brazilian-style method of preparing steak. It is served with Chimichurri sauce. Chimichurri is a classic sauce from Argentina and Uruguay, served with grilled meat. It is not limited to steak. You can serve it with fish, chicken, or shellfish.

Picanha Steak with Chimichurri

 

 Chimichurri Ingredients

  • 1 c. firmly packed fresh flat-leaf parsley
    3 cloves garlic
    2 Tbsp. fresh oregano
    1/3 c. extra-virgin olive oil
    1/4 c. red wine vinegar
    2 tsp. finely grated lemon zest (optional)
    Pinch of red pepper flakes
    Kosher salt

  • Picanha Steak Ingredients
    Vegetable oil, for grill
    2 lb. sirloin cap, cut into 4 (1 1/2") steaks 
    2 1/4 tsp. kosher salt 
    1 tsp. freshly ground black pepper

  • 4 metal skewers

Chimichurri Steps:

  1. In a food processor, pulse parsley, garlic, and oregano until herbs and garlic are finely chopped. (This can also be done by hand with a chef's knife.)

  2. Transfer parsley mixture to a medium bowl and stir in oil, vinegar, lemon zest (if using), and red pepper; season with salt.

Picanha Steak Steps

  1. Prepare a grill for high heat; preheat 5 minutes (or heat a grill pan over high heat). Clean and oil grates. Curl steak and push through skewers; season with salt and pepper.

  2. Grill steak, turning halfway through, until an instant-read thermometer inserted into thickest part registers 130°, 4 to 6 minutes per side.

  3. Transfer to a cutting board. Let rest 10 minutes before slicing. Serve with chimichurri alongside.
