Happy Mother's Day! 💐💐💐
Years ago, I was the team mom for my bonus son's football and basketball teams. I had a house full of boys several Friday and Saturday nights and more impromptu sleepovers than I care to remember.
I would fix a big breakfast the morning after. Homemade French Toast was an easy dish to pull together. One day, I decided to add Grand Marnier to the recipe. 😋 It was on and poppin' after that. I noticed that more curbside pickup ended, and more parents came to the door to pick up their kids. 😂😅 Of Course, I feed the parents too.
Tips: Serve with warm syrup. You can warm the syrup in the microwave. I use oranges that are close to the end of their lives.

Grand Marnier French Toast with Orange Compote
Ingredients:
• 1 loaf of French bread sliced 1 inch thick.
• 4 large eggs.
• 1/2 cup heavy cream
• 1/4 cup Grand Marnier (orange-flavored liqueur).
• 1/2 of cup sugar
• 1/2 teaspoon vanilla extract.
• Butter (for greasing the pan)
• Maple syrup (optional, for serving).
• 3 medium oranges (zested and juiced)
• 1/4 cup water
• 1 teaspoon cornstarch (dissolved in 1 tablespoon water, for thickening)
1. Preheat oven to 350 degrees
2. Prepare the batter: In a large mixing bowl, whisk together eggs, heavy cream, Grand Marnier, 2 tablespoons of sugar, and vanilla extract until smooth.
3. Soak the bread: Dip each slice of bread into the batter, ensuring it’s fully coated but not overly soggy.
4. Cook the French toast: Coat large baking pan with butter.Cook each slice for about 2-3 minutes per side, or until golden brown.
5. Prepare the oranges: Zest and juice the oranges, ensuring you have about 1/4 cup of orange juice.
6. Cook the compote: In a small saucepan, combine the orange juice, orange zest, sugar, and water. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves.
7. Thicken the compote: Stir in the cornstarch mixture (1 teaspoon cornstarch dissolved in 1 tablespoon water) and let it cook for 1-2 minutes, or until the compote begins to thicken slightly.
8. Cool slightly: Remove the compote from heat and let it cool slightly before serving.
9. Assembly: Arrange French toast on plate, spoon the orange compote over the French toast and warm the syrup
