Diner Delight at Home: Grilled Shrimp, Watermelon & Feta Salad

Between us "girls," I like eating at diners. I think it was all those years traveling to New Jersey. The Silver Diner is my favorite local diner. They try to source their ingredients from local farms. They have a seasonal salad I love—grilled shrimp and watermelon. It is a perfect balance of sweet and savory with every bite.

Here is my attempt to recreate their salad. It is effortless to prepare. If you don't eat or cannot have shellfish, you can substitute another protein. A flank steak or grilled chicken works too.

Grilled Shrimp, Watermelon, & Feta Salad

Recreating Diner Magic : Here's what you'll need to whip up this delightful salad:

Ingredients:
1 pound of large shrimp, peeled and deveined
2 cups of watermelon, diced
1/2 cup of black olives, sliced
1/2 cup of crumbled Feta cheese
1 cup of cherry tomatoes, halved
1/2 cup of pomegranate seeds
1 cup of quinoa, cooked
Olive oil
Salt and pepper
Fresh mint leaves, chopped (optional)


For the dressing:
1/4 cup of olive oil
2 tablespoons of balsamic vinegar
1 tablespoon of honey
Salt and pepper to taste


Steps:

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, salt, and pepper. Grill the shrimp for 2-3 minutes on each side until cooked through. Set aside.
  3. In a large salad bowl, combine the watermelon, black olives, cherry tomatoes, pomegranate seeds, feta cheese and cooked quinoa.
  4. In a small bowl, whisk together the ingredients for the dressing.
  5. Pour the dressing over the salad and toss to combine.
  6. Top the salad with grilled shrimp and fresh mint leaves (if using).
  7. Serve the salad immediately and enjoy!
