Say Goodbye to Mayo! Delicious Herb Red Skin Potato Salad

Years ago, I was talking with my friend Sarita. She said the strangest thing: She doesn't like mayonnaise. I went into shock; I almost swallowed my tongue.🤯 Who doesn't like mayo!?!
Fast-forward to this weekend, and I decided to make potato salad. I challenged myself to make a mayo-free salad. I was pleased with the end result.
I added bacon. You can use turkey bacon or none at all. I think you will enjoy it with or without bacon.

Delicious Herb Red Skin Potato Salad

Simple Steps, Big Flavor

The beauty of this recipe lies in its simplicity. Here's how you can create this mayo-free masterpiece:

Ingredients

3 pounds red potatoes
5 tablespoons white wine vinegar, divided
½ cup extra-virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon kosher salt or to taste
½ teaspoon freshly ground black pepper
½ small red onion, finely chopped,
2 tablespoons minced fresh dill
2 tablespoons minced fresh basil
2 tablespoons minced Italian flat-leaf parsley
4 crispy bacon strips

Steps:

  1. Cook bacon. Crumble and place to the side.
  2. Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Bring to a boil over high heat, add 1 tablespoon of kosher salt, and cook the potatoes until tender, about 15-20 minutes or until fork tender. Drain well.
  3. As soon as the potatoes are cool enough to handle, cut them into quarters and place them in a large mixing bowl.
  4. While the potatoes are still hot, sprinkle them with 3 tablespoons of the vinegar and let them cool to absorb the vinegar.
  5. In a small bowl, whisk the olive oil, remaining 2 tablespoons of vinegar, Dijon mustard, kosher salt, and pepper.
  6. Drizzle the dressing over the potato mixture and gently toss. Add the sliced onion and minced herbs and toss again.
  7. Season with more salt and pepper to taste.
  8. Top with bacon.
  9. Serve chilled.
