Mini Shepherd's Pies Recipe

 Get ready to celebrate St. Patrick's Day with a twist! This week, I’m sharing a super simple recipe for Mini Shepherd's Pies. These flavorful little bites are perfect appetizers and so much fun to serve at your gathering. Let’s get cooking and enjoy some Irish cheer!

For the filling:
  • 1 lb ground lamb or beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 cup peas 
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup beef or vegetable broth
  • 2 tablespoons olive oil
For the mashed potato topping:
  • 2 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup of sour cream
  • 4 tablespoons butter
  • Salt and pepper, to taste


    1. Prepare the Filling:
      • In a large skillet, heat the olive oil over medium heat.
      • Add the chopped onion and carrot, and sauté until softened (about 5 minutes).
      • Stir in the garlic and cook for another minute until fragrant.
      • Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned.
      • Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
      • Pour in the broth and add the peas. Bring to a simmer and cook for about 10-15 minutes, until the mixture thickens slightly. Remove from heat.
    2. Prepare the Mashed Potatoes:
      • While the filling is simmering, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender (about 15-20 minutes).
      • Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
    3. Assemble the Mini Shepherd's Pies:
      • Preheat your oven to 400°F 
      • Spoon the meat filling into individual ramekins or a muffin tin, filling them about 3/4 full.
      • Top each with a generous scoop of mashed potatoes, spreading it evenly across the top.
      • Use a fork to create some texture on the mashed potatoes (this will help them get a nice golden color).
    4. Bake:
      • Place the filled ramekins or muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown.
    5. Serve:
      • Let them cool for a few minutes before serving. Enjoy your Mini Shepherd's Pies warm!
