Savory Summer Salad You'll Make All Season Long

Happy belated Mother's Day to all the incredible moms out there! This past Mother's Day, we celebrated with a delicious barbecue. While the grill was sizzling, I was busy whipping up the sides.

I stumbled across this recipe online and made a few tweaks. It quickly became a crowd-pleaser, and let me tell you, I will be making this salad all summer long 😍. It's the perfect balance of everything.


Here's what makes this salad so special:

• Make-Ahead Magic: The dressing can be prepped a day in advance, and the salad itself tastes even better the next day. ( I like salad for breakfast).

Summer Salad

 

Dressing Ingredients

• 4 or 5 mint stems
3 stems of basil
1 fat green chilli, deseeded and chopped
1 small garlic clove
7 tablespoons extra virgin olive oil
2 limes, zested and juiced
2 tbsp white wine vinegar
2 tsp honey

 

Salad Ingredients

15 oz black beans, drained
2 large handfuls of baby spinach leaves, roughly chopped
4 tomatoes, chopped into large chunks
1 cucumber chopped
1 mango, peeled and chopped into chunks
1 large red onion, halved and finely sliced
2 avocados, peeled and sliced
1/2 cup of mix olives
feta, crumbled to taste
handful of herbs (reserved from the dressing)

Steps:

  1. Make the Dressing: Make the dressing by blending all of the ingredients in a food processor (or very finely chop them), saving a few herb leaves for the salad. You can make the dressing up to 24 hrs before serving.
  2. Assemble the Salad: Scatter the beans and spinach over a large platter. Arrange the tomatoes, cucumber, mango, onion and olives on top and gently toss together with your hands.
  3. Finishing Touches: Top the salad with the avocados, feta, and herbs, and serve the dressing on the side.
