First: What Makes Wine Sparkling?
Bubbles in wine come from carbon dioxide — the same gas that makes soda fizzy. In sparkling wine, that CO₂ is produced during a secondary fermentation, either in the bottle itself (the traditional method, used for Champagne and Crémant) or in a large pressurized tank (the Charmat method, used for Prosecco and Moscato).
The method matters because it affects the size and persistence of the bubbles, as well as the flavor profile.
