Spicy Szechuan Noodles with Garlic Chili Oil Recipe
For years Riesling has unfairly been known as the syrupy sweet wine. Yes, there is a style of Riesling which is sweet and can be served as a dessert wine, but that is not the sum of Riesling.Â
Riesling can be made in a few styles. Internationally, it is know for its natural sweetness and high acidity. It is made as a drier style white wine frequently. The Riesling grape grows extremely well in cooler climates with a shorter growing season, resulting in crisp, intense aromas and flavors like lime, nectarine, and apricot wines.Â
March 13 is International Riesling Day. We celebrate this frequently misunderstood wine with a spicy recipe. Spicy food is the perfect pairing because of Riesling's sweetness and acid. Asian and Indian cuisine are classic pairings.
I love wide noodles. Drunken noodles is one of my favorite Thai dishes, because of the wide noodles. I selected the Spicy Szechuan Noodles with Garlic Chili Oil recipe because of the wide noodles and how easy it is to prepare the dish. It also packs a good spicy punch and flavor. Essentially, you toss the wide noodles in a spicy, garlicky Szechuan chili oil sauce and fresh herbs.
