The pale yellow color tinged with green announces a wine of great freshness and purity. The complex nose delivers floral and mineral notes with hints of fresh citrus fruits. The lively and fresh palate reveals aromas of flowers, white fruits and flint and the very tender finish shows great minerality. white peach and star fruit flavors. Nostre Païs blanc plays less on exuberance than on freshness, purity and balance. It offers notes of fresh lemon, white flowers and flint (gunflint). The palate is precise and slightly fleshy. The finish is supple and offers a lot of minerality. We started the white harvest in the last week of August, noting very small yields but with very nice balances, and in particular acidities well above average. This year we have chosen to let the malolactic fermentation take place on a few barrels of whites, and I am convinced that 2021 will be a great year for whites.
