An unusually light hued expression of the deeply colored Tannat grape, Bacalao was pressed and vinified in such a way to become a white wine, revealing bright peach and stone fruit, delicate floral notes and touches of tropical fruit rather than Tannat’s familiar dark-fruited profile. A subtle structural grip gives the wine more texture than a conventional white while lively acidity keeps it fresh and energetic. Bacalao is the name given the wine by the owners as an ode to the style and their heritage and deep love of Basque culture and cuisine.
This Tannat is grown and harvested by personally selected vineyards in Yolo County, California where they believe gives one of the best representations of this grape in the United States, while being transported the same day for vinification and bottling in their Oregon winery at Teutonic.
Teutonic Wine Company is an Oregon -Willamette based husband-and-wife project of proprietors Olga and Barnaby Tuttle, who built their small independent winery together, with Barnaby leading its unconventional winemaking approach. His experimentation with wild vineyard yeasts, whole clusters, skin contact and unexpected varieties is perfectly captured by Bacalao: taking famously dark, tannic Tannat and making it as a juicy, flavorful white. It embodies this collection’s exploration of familiar grapes through an entirely different lens, with enough texture and grip for fall.
