This is not your grocery store cider. This is a 150-case limited release, crafted from four heritage apple varieties grown on a sustainably farmed Hudson Valley orchard, aged on lees for 6 months and in neutral oak barrels for another 6 months, unfined, unfiltered, and finished with minimal sulfur. The artwork on the bottle is commissioned. The philosophy behind it is generational. And the people who made it are two of the most thoughtful and culturally grounded cidermakers in the country.
Brooklyn Cider House was founded by Peter Yi and his sister Susan Yi — an Asian minority-owned, family-run cider company with two anchoring locations: a Basque-style restaurant, bar, and cidery in Bushwick, Brooklyn, and their farm and orchard in the Hudson Valley, Twin Star Orchards. Two generations of cidermakers inspired by the Basque region, their Korean heritage, and both Old and New World winemaking practices, the Yi siblings built Brooklyn Cider House around one beautifully simple mission: make remarkable cider with one ingredient. Apples.
“Fabler” is the expression of that mission at its most refined: citrusy, bright, and complex, with aromas of citrus peel, green apple, and creamsicle leading into a crisp, acid-driven palate rounded by the rich, rounded mouthfeel that comes from a full year of careful aging. A Shades of Vino Autumn Club selection and a Fall Bestseller — and one of the most unexpected and rewarding bottles in the entire collection.

Food Pairing
The citrus peel, green apple, creamsicle aromatics, and acid-driven richness of this barrel-aged Hudson River cider make it one of the most food-versatile and genuinely surprising pours you can put on a fall table. Pairs beautifully with aged sharp cheddar, Comté, and Gruyère — the oak and lees character mirrors aged cheese in the most complementary way. The bright acidity makes it a wonderful match for pork chops, roasted chicken, and anything with apple or mustard in the preparation. Also excellent alongside oysters, smoked salmon, and light charcuterie. A natural for Outdoor Adventure settings, fall picnics, harvest dinners, and any occasion where you want to surprise your guests with something they’ve genuinely never tasted before. Serve at 46–50°F, lightly chilled.

A 150-case limited release that means once it’s gone, it’s gone.
About Brooklyn Cider House & Twin Star Orchards
Brooklyn Cider House is a family-owned, Asian minority-owned cider company with two homes: a Basque-style restaurant, bar, and cidery in Bushwick, Brooklyn — where diners experience traditional Basque “catch” ceremonies, drinking cider streamed directly from large barrels — and Twin Star Orchards, their sustainably farmed apple orchard and farm in the Hudson Valley. Founded by siblings Peter Yi and Susan Yi, Brooklyn Cider House draws its inspiration from Basque cider culture, Korean heritage, and both Old and New World winemaking traditions. Their philosophy is clear and unwavering: remarkable cider begins with one ingredient. Apples — grown with care, harvested with intention, and crafted with the kind of patience that turns a fermented apple into something genuinely extraordinary.
