About Méthode Champenoise

Méthode champenoise — also called traditional method or méthode traditionnelle — is the same labor-intensive process used to make Champagne: after primary fermentation, the wine undergoes a second fermentation directly in the bottle, where it ages on the spent yeast (lees) for an extended period before disgorgement.
