There are few things more iconic in American regional cooking than a Maryland crab cake. Not the breadcrumb-heavy, filler-packed versions you find at chain restaurants — but a real Maryland crab cake: mostly crab, barely bound, golden on the outside, sweet and tender within.

She brought us her Callahan Style Crab Cakes — a recipe built on one pound of Maryland jumbo lump crab meat, bound with just enough mayonnaise, egg, Dijon, and Worcestershire to hold together, and finished with crushed Saltines for that classic Chesapeake crunch. The Recipe: Christina's MD Callahan Style Crab Cakes
The secret to a great Maryland crab cake is restraint. The crab is the star — everything else is just there to hold it together and enhance its natural sweetness. Christina's recipe honors that philosophy perfectly: minimal filler, maximum crab, and just enough seasoning to bring out the best in the Chesapeake's finest.
Ingredients
- 1 lb Maryland jumbo lump crab meat, picked over for shells
- ½ cup mayonnaise
- 1 egg, beaten
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Hot sauce, to taste (optional)
- Crushed Saltine crackers (just enough to bind)
Instructions
- In a large bowl, whisk together mayonnaise, egg, Dijon mustard, Worcestershire sauce, and hot sauce (if using) until smooth.
- Gently fold in the crab meat, being careful not to break up the lumps — those beautiful chunks are what make a Maryland crab cake special.
- Add crushed Saltines a little at a time, mixing gently until the mixture just holds together. Do not over-mix.
- Form into 8 crab cakes, about ¾ inch thick. Place on a lined baking sheet.
- Refrigerate for at least 1 hour (this is essential — it helps the cakes hold their shape during cooking).
- Cook using your preferred method: sauté in butter over medium heat for 3–4 minutes per side, broil for 8–10 minutes, or pan-fry in oil until golden brown on both sides.
- Serve immediately with lemon wedges, tartar sauce, or remoulade.
