Cristel S., a proud member of our Shades of Vino Club — and part of our 2026 Summer Shades of Vino Collection — submitted a recipe that is unapologetically bold. Harissa paste. Smoked paprika. Cumin. Lemon. Garlic. All of it slathered onto chicken leg quarters and left to marinate until the flavors have nowhere left to go but deep.

This is summer grilling at its most confident. And it deserves wines that are equally unafraid.

We found two. One bright and citrus-driven to cool the heat. One rich and spice-forward to match it stride for stride. Both are exactly what this dish is asking for.


The Recipe: Cristel's Grilled Harissa Chicken Leg Quarters

If you've never cooked with harissa, consider this your introduction. Harissa is a North African chili paste — smoky, complex, and deeply savory — and it transforms chicken from weeknight ordinary to weekend extraordinary. Paired with smoked paprika, cumin, and a hit of lemon, this marinade builds layers of flavor that hold up beautifully on the grill.

The key is time. Give the chicken at least an hour to marinate (four hours if you can swing it), and use both direct and indirect heat on the grill for skin that's charred and crispy on the outside while staying juicy all the way through.

Ingredients

  • 4 chicken leg quarters
  • ¼ cup harissa paste
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt

  • Juice of 1 lemon

Instructions

  1. Whisk together harissa, olive oil, garlic, honey, paprika, cumin, salt, pepper, and lemon juice until fully combined.
  2. Coat chicken quarters thoroughly in the marinade. Cover and refrigerate for 1–4 hours — the longer, the better.
  3. Preheat your grill to approximately 400°F, setting up both direct and indirect heat zones.
  4. Sear chicken over direct heat for 4–5 minutes per side until you get those gorgeous char marks.
  5. Move to indirect heat and continue cooking for 20–25 minutes, until the internal temperature reaches 165°F.
  6. Rest for 10 minutes before serving — this step keeps all those juices exactly where they belong.
