He brought us a classic Pennsylvania Dutch recipe rooted in America's agricultural heritage: a whole chicken simmered into a rich, golden broth, shredded and returned to the pot with sweet corn, onion, celery, and parsley. Simple, honest, and deeply nourishing.

The Recipe: David's Chicken Corn Soup

The Pennsylvania Dutch tradition of chicken corn soup is one of the great American culinary legacies. Born from the agricultural communities of Pennsylvania, this soup celebrates the two ingredients that defined the region's farming heritage: the farmyard chicken and the summer corn harvest. It's a dish that tastes like history — and like home.

Ingredients

  • 1 whole chicken
  • Fresh or frozen corn (cut from the cob for best results)
  • Onion, diced
  • Celery, sliced
  • Fresh parsley, chopped
  • Salt and pepper, to taste
  • Hard-boiled eggs, sliced (optional, traditional Pennsylvania Dutch addition)

Instructions

  1. Place the whole chicken in a large stockpot and cover with cold water. Bring to a boil, then reduce to a gentle simmer. Cook for 1.5–2 hours until the chicken is completely tender and the broth is rich and golden.
  2. Remove the chicken from the pot and let cool. Skim any excess fat from the broth.
  3. Once cool enough to handle, remove the chicken meat from the bones and shred into bite-sized pieces. Discard the bones and skin.
  4. Return the broth to a simmer. Add diced onion, sliced celery, and corn. Cook until the vegetables are tender, about 15–20 minutes.
  5. Return the shredded chicken to the pot. Season generously with salt and pepper. Add fresh parsley.
  6. Simmer for another 10 minutes to allow the flavors to meld.
  7. Serve hot, garnished with sliced hard-boiled eggs if desired.
