The Recipe: Debbie's Chicken with Mandarin Oranges & Almonds

Ingredients

  • Chicken pieces (bone-in, skin-on preferred)
  • Mandarin oranges, peeled and segmented
  • Raisins
  • Madeira wine
  • Paprika
  • White pepper
  • Garlic, minced
  • Beef bouillon
  • Soy sauce
  • Fresh ginger, grated
  • Heavy cream
  • Butter
  • Almonds, toasted
  • Cornstarch (for thickening)

Instructions

  1. Season chicken pieces with paprika and white pepper. In a large skillet or Dutch oven, brown chicken in butter over medium-high heat until golden on all sides. Remove and set aside.
  2. In the same pan, sauté garlic and ginger briefly. Add Madeira wine and deglaze, scraping up any browned bits.
  3. Add beef bouillon, soy sauce, mandarin orange segments, and raisins. Stir to combine.
  4. Return chicken to the pan. Bring to a simmer, cover, and cook until chicken is tender and cooked through, about 30–40 minutes.
  5. Remove chicken. Mix cornstarch with a small amount of cold water and stir into the sauce to thicken. Stir in heavy cream and heat through.
  6. Return chicken to the sauce and coat well.
  7. Garnish with toasted almonds and serve over rice or egg noodles.
