Denise's Easy Smothered Shrimp + the Wines That Love Southern Comfort

A Shades of Vino Club Recipe | Submitted by Denise J.

There are dishes that feed you, and then there are dishes that hold you. Denise J.'s Easy Smothered Shrimp is firmly in the second category.

Denise is a proud member of our Shades of Vino Club — and her recipe is part of our 2026 Summer Shades of Vino Collection. She brought us a dish rooted in the rich, soulful tradition of Southern cooking: plump shrimp, crispy bacon, a silky Cajun-spiced gravy, and the kind of depth that only comes from cooking with love and bacon drippings.

Served over rice or grits, this is the dish you make when you want people to feel genuinely taken care of. And the right wine? It makes that feeling last all the way to the bottom of the glass.

The Recipe: Denise's Easy Smothered Shrimp

What makes this recipe special is its layered approach to flavor. You're not just cooking shrimp — you're building a gravy from the ground up, starting with bacon drippings and ending with a rich, velvety roux that wraps around every ingredient like a warm embrace.

Ingredients

  • ½ pound large shrimp, peeled and deveined
  • 4–6 slices bacon
  • 1 bell pepper, diced
  • ½ yellow onion, diced
  • 2–4 cloves garlic, minced
  • 2–4 tablespoons butter
  • 2–4 tablespoons flour
  • 1–2 cups chicken or seafood broth
  • Salt and pepper to taste
  • Cajun seasoning to taste

Instructions

  1. Season shrimp generously with salt, pepper, and Cajun seasoning.
  2. Cook bacon until crisp. Set aside and reserve the drippings in the pan — this is liquid gold.
  3. Sauté diced bell pepper and onion in the bacon drippings until softened and fragrant.
  4. Add shrimp and cook just until pink, about 2–3 minutes. Remove shrimp and set aside.
  5. Add garlic to the pan and sauté briefly, about 30 seconds.
  6. Melt butter into the pan, stir in flour, and cook into a roux — stirring constantly for 1–2 minutes until golden.
  7. Slowly whisk in broth until a smooth, rich gravy forms. Simmer until thickened.
  8. Return shrimp and crumbled bacon to the pan. Stir to combine.
  9. Season to taste and serve over fluffy white rice or creamy stone-ground grits.

Serves: 2–4 | Total Time: ~45 minutes | Difficulty: Easy

The Wine Pairing: What Do You Drink with Smothered Shrimp?

Smothered shrimp is a study in contrasts: the delicate sweetness of the shrimp, the smoky richness of the bacon, the savory depth of the gravy, and the gentle heat of the Cajun seasoning. We chose two wines that approach this dish from completely different angles — one brings texture and brightness, the other brings structure and dark fruit.

🥂 Primary Pairing: 2025 Lampley Chardonnay

The 2025 Lampley Chardonnay from Lake Michigan Shore AVA, Fennville, Michigan is exactly the kind of Chardonnay this dish is calling for.

  • Creamy texture mirrors the silky roux-based gravy.
  • Bright acidity cuts through the richness of the bacon drippings and butter.
  • Stone fruit and subtle oak notes complement the sweetness of the shrimp without competing with the Cajun spice.

At $28, this Chardonnay punches well above its price point. And here's what makes it even more meaningful: Lampley is Black-owned and woman-owned — a Michigan winery that represents exactly the kind of producer we built The Wine Concierge to celebrate.

🍷 Secondary Pairing: 2023 Caduceus Anubis

A bold red with shrimp? When that shrimp is smothered in bacon-laced Cajun gravy, absolutely yes. The 2023 Caduceus "Anubis" from Cochise County, Willcox AVA, Arizona is a red blend built for exactly this kind of rich, layered dish.

  • Dark fruit intensity — blackberry, plum, dried herbs — stands up to the smoky bacon and savory gravy.
  • Firm structure and tannins provide a counterpoint to the richness of the dish.
  • Spice and earthiness echo the Cajun seasoning beautifully.

At $64, this is the bottle you open when the food is this good and the company is even better. Arizona wine is one of the most exciting emerging regions in the country, and Caduceus is one of its most distinctive voices.

The Bigger Picture: America's Culinary Soul

Smothered shrimp is more than a recipe. It's a window into the rich culinary traditions of the American South — a cuisine built on resourcefulness, community, and the kind of cooking that turns simple ingredients into something transcendent. Denise's recipe carries that tradition forward, and we're honored to pair it with wines that reflect the full diversity of American winemaking.

Wine Pairing Tips for Rich Seafood & Gravy Dishes

  • Match the richness: A butter-and-roux dish needs a wine with enough body to stand alongside it.
  • Chardonnay is a natural ally: Its texture and acidity make it ideal for cream- and butter-based sauces.
  • Don't rule out reds with seafood: When the dish has smoky, savory elements like bacon and Cajun spice, a structured red can be a revelation.
  • Watch the heat: Cajun seasoning can amplify alcohol perception — choose wines with good fruit to balance the spice.
  • Serve whites slightly chilled, reds at cellar temp: ~55°F for the Chardonnay, 62–65°F for the Anubis.
