Joe's Chicken & Wild Rice Bake + the Pinot Noirs That Were Made for It
Joe's Chicken & Wild Rice Bake + the Pinot Noirs That Were Made for It
A Shades of Vino Club Recipe | Submitted by Joe A.
Some dishes don't need to be complicated to be extraordinary. Joe A.'s Chicken & Wild Rice Bake is proof of that.
Joe is a proud member of our Shades of Vino Club — and his recipe is part of our 2026 Summer Shades of Vino Collection. He brought us a dish that is the definition of American comfort: chicken breasts nestled into a bed of wild and white rice, bathed in a savory cream of mushroom broth spiked with Better Than Bouillon and a dash of Tabasco, then finished with melted white cheddar and fresh chives. It's the kind of meal that fills the house with an incredible smell and fills the table with happy people.
And it pairs beautifully with Pinot Noir. We found two — one earthy and complex, one bright and fruit-forward. Together, they cover every dimension of this deeply satisfying dish.
The Recipe: Joe's Chicken & Wild Rice Bake
What makes this recipe work is the layering of flavors in the braising liquid. The cream of mushroom soup brings richness and umami. The chicken stock adds depth. The Better Than Bouillon amplifies the savory notes. The Tabasco adds just enough heat to keep things interesting. And the wild rice — with its nutty, earthy character — absorbs all of it and becomes something extraordinary.
Ingredients
- 2 chicken breasts
- 1 cup wild rice
- 1 cup white rice
- 1 can cream of mushroom soup
- Milk
- Chicken stock
- Better Than Bouillon vegetable base
- Tabasco, to taste
- White cheddar cheese, shredded
- Fresh chives, chopped
- Paprika
- Salt and pepper
Instructions
- Preheat oven to 350°F.
- Combine wild rice and white rice in a greased baking dish.
- Season chicken breasts with paprika, salt, and pepper. Place on top of the rice.
- In a bowl, whisk together cream of mushroom soup, chicken stock, milk, Better Than Bouillon, and Tabasco until smooth.
- Pour the liquid mixture around the chicken, ensuring the rice is well coated.
- Cover tightly with foil and bake for 60–75 minutes, until the chicken reaches an internal temperature of 165°F and the rice is tender and has absorbed the liquid.
- Remove foil, top with shredded white cheddar and fresh chives.
- Broil for 3–5 minutes until the cheese is melted and golden.
- Let rest for 5 minutes before serving.

The Wine Pairing: Why Pinot Noir Is Perfect for This Dish
Chicken and wild rice is one of those classic combinations that was practically designed for Pinot Noir. Here's why: wild rice has a deep, nutty, almost earthy character that mirrors the forest floor and mushroom notes that great Pinot Noir is known for. The cream of mushroom soup amplifies that connection. The chicken provides a neutral, savory canvas that lets the wine's fruit and acidity shine. And the white cheddar adds a richness that calls for a wine with enough body to stand alongside it.
We chose two Pinot Noirs that approach this dish from slightly different angles — one that leans into the earthy, savory elements, one that brings brightness and lift to the richness of the casserole.
🍷 Primary Pairing: 2024 Brooks Willamette Pinot Noir
Oregon Pinot Noir and wild rice were made for each other. The 2024 Brooks Willamette Pinot Noir from Eola-Amity Hills AVA, Oregon is a textbook example of why this pairing works so beautifully.
- Earthy, forest floor notes mirror the deep, nutty character of the wild rice and the umami richness of the cream of mushroom soup — creating a seamless connection between the glass and the dish.
- Red cherry and raspberry fruit provide brightness and freshness that lifts the richness of the casserole without competing with it.
- Silky tannins and elegant structure give the wine enough presence to stand alongside the white cheddar and savory braising liquid, while remaining light enough to complement the delicate chicken.
At $33.99, this is a Pinot Noir that delivers the full Oregon experience at an accessible price point. And it comes with a story worth telling: Brooks is woman-owned and woman winemaker-led, an Oregon winery that has been making exceptional Pinot Noir for decades. Every bottle is a celebration of what women bring to the wine world.

🍷 Secondary Pairing: 2023 Chamisal San Luis Obispo Pinot Noir
If the Brooks leans into the earthy, savory soul of the dish, the Chamisal brings California sunshine — bright fruit, lively acidity, and a freshness that makes every bite feel lighter and more vibrant.
The 2023 Chamisal San Luis Obispo Pinot Noir from Central Coast, California is a Pinot Noir built for exactly this kind of occasion — a rich, comforting dish that benefits from a wine with enough acidity to keep the palate refreshed.
- Bright red fruit — strawberry, cranberry, and a hint of pomegranate — provides a beautiful contrast to the savory, mushroom-forward flavors of the casserole.
- Lively acidity cuts through the richness of the cream of mushroom soup and white cheddar, keeping every bite feeling fresh and balanced.
- Approachable, food-friendly style makes this a wine that works beautifully at the dinner table without demanding attention — it enhances the meal rather than competing with it.
At just $20, this is one of the best-value Pinot Noirs in our entire Summer Collection — and it comes from a women-owned producer whose work on California's Central Coast is consistently impressive. San Luis Obispo County is producing some of the most exciting Pinot Noir in the state, and Chamisal is one of the reasons why.

Wine Pairing Tips for Chicken & Rice Dishes
Chicken and rice casseroles are one of the most versatile wine pairing categories — and Pinot Noir is almost always the right answer. Here's how to think about it:
- Wild rice loves earthy wines: The nutty, earthy character of wild rice is a natural match for Pinot Noir's forest floor and mushroom notes. It's one of the great natural affinities in food and wine pairing.
- Mushroom-based sauces call for Pinot: Cream of mushroom soup amplifies the umami connection between the dish and the wine. If there are mushrooms in the dish, there's almost certainly a Pinot Noir that belongs in the glass.
- Acidity matters with rich casseroles: A wine with good acidity — like both of these Pinot Noirs — cuts through the richness of the cream and cheese, keeping the palate refreshed between bites.
- Avoid heavy tannins with chicken: Chicken is a delicate protein that can be overwhelmed by high-tannin reds. Pinot Noir's naturally low tannins make it the ideal red wine for poultry dishes.
- Serve slightly cool: Both of these Pinot Noirs show their best at around 60–65°F — slightly cooler than room temperature, which brings out the fruit and keeps the wine feeling fresh.
