  2. Halve each biscuit, roll into balls, slice an X across the top.
  3. Bring 2 cups water + baking soda to a boil. Reduce to a simmer. Cook biscuits in batches until puffy, about 1 minute. Remove with a slotted spoon.
  4. Arrange biscuits in a ring inside a 10"–12" ovenproof skillet. Brush with egg wash, sprinkle with coarse salt.
  5. Transfer dip to center of skillet. Top with remaining ¼ cup cheddar.
  6. Bake 33–35 minutes until biscuits are golden and dip is bubbly.
  7. Garnish with chives. Serve immediately — and don't blink or it'll be gone.
