Working with Pinot Gris from a single vineyard, Dave coins this a “method Dave” pet-nat. Destemmed and pressed, fermented to dry in stainless steel tanks, tiraged like a champagne style bubbly, but released without disgorgement or dosage. Bright, fresh, tart tangerine, lime zest with hints of pineapples and white peaches and slate.
