Refreshing PINEAPPLE SKEWERS WITH YOGHURT & LIME DRIZZLE

I've been busy with a new project. The Importer's Corner was started almost six month ago. Importer's Corner is a wine club I started with Alyssa Wolf, co-owner of Red Wolf Importers. (yes, another wine club).  This club only features Red Wolf Importers wines imported from South Africa and Portugal.

During our virtual tasting, we chatted about Braai (pronounced br-rye).  Braai is a South Africa BBQ.  According to Alyssa, "Braai is the only word in all eleven official languages of South Africa, and it is a tradition that all South Africans embrace. Like BBQ, braai can be used as a verb or a noun." Grilled sausages, lamb, or burgers are foods typically served at a Braai.

Instead of a hearty meat dish Braai is known for, I thought you would enjoy a grilled snack. I found Chad-O- Chef Qube's grilled pineapple recipe.  It's a Crush.com recipe inspired by the classic Durban beachfront sweet treat – pineapple wedges are coated in a spice mix and caramelized finished with lime & honey-infused yoghurt and coconut shavings.

PINEAPPLE SKEWERS WITH YOGHURT & LIME DRIZZLE

Ingredients

  • Lime Yoghurt Drizzle
    ⅓ C  plain double cream yoghurt
    2 Tbsp  honey
    1 Tbsp  fresh mint, very finely chopped
    juice and zest of 1 lime

  • Spiced Pineapples
    1 tsp cumin
    1 tsp  ground coriander
    1 tsp  ground ginger
    1 tsp  ground fennel
    ½ tsp  ground cinnamon
    ½ tsp  ground cloves
    1 tsp  paprika
    ½ tsp  chilli powder
    1 Tbsp sugar
    1 tsp  curry powder
    1 tsp  salt
    1 tsp  pepper
    -
    2 Queen pineapples, peeled and cut into quarters

  • Butter Basting 
    ¼ C butter
    2 Tbsp honey
    2 tsp spice mix (above)

  • To Serve
    coconut shavings, lightly toasted
    4-5 mint leaves, washed and thinly sliced.

 

Steps:

  1. Lime Yoghurt Drizzle
    In a small bowl, combine the yoghurt, honey, mint, lime juice and zest. Mix well, cover, and set aside.

  2. Build a medium-heat fire.

  3. Mix all of the ingredients for the spice mix together.
    Skewer the pineapple quarters onto the skewers. Generously sprinkle with the spice mix, coating all sides.

  4. In a small microwave-proof dish, combine the butter, honey, and spice mix. Microwave until melted, then mix to combine.

  5. Place the skewers onto the grill.

  6. Using a pastry brush, baste the pineapple with the butter basting, rotating to ensure even caramelization. Grill the pineapples until well caramelized on all sides, then remove from the heat.

  7. Serve the pineapple skewers drizzled with the lime-honey yoghurt and garnished with toasted coconut shavings and sliced mint. Enjoy!
