Pinot Noir with Salmon? Yes Please! Grilled Salmon Recipe for Pinot Noir Day

August 18 is Pinot Noir Day!  We're celebrating Pinot Noir Day with Grilled Salmon.  Forget those old myths about white wine is only for fish and chicken.

You can have red wine with fish.  Consider how the protein is prepared, seasoning and sauces.  The grilled salmon has a smokey influence and is marinated with a brown sugar soy sauce. These are perfect pairings with Pinot Noir.

Grilled Salmon & Grilled Corn Salad

 

Ingredients

Grilled Salmon

 

  • 1 ½ pounds salmon fillets

  • lemon pepper to taste

  • garlic powder to taste

  • salt to taste

  • ⅓ cup soy sauce

  • ⅓ cup brown sugar

  • ⅓ cup water

  • ¼ cup vegetable oil

 

Grilled Corn Salad

  • 6 ears of fresh corn shucked

  • 4 tablespoons olive oil

  • 1 red onion finely chopped

  • 2-3 cups ripe tomatoes chopped

  • 1 cup crumbled feta cheese

  • 1 cup fresh basil chopped

  • juice of 1 lemon

  • salt & pepper to taste

Steps

 

Grilled Salmon

  1. Slice Salmon into fillets. You can leave skin on.

  2. Season salmon fillets with lemon pepper, garlic powder, and salt

  3. Stir soy sauce, brown sugar, water, and vegetable oil together in a small bowl until sugar is dissolved. Place fish in a large resealable plastic bag; add soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.

  4. Preheat an outdoor grill for medium heat and lightly oil the grate.

  5. Place salmon on the preheated grill, and discard marinade. Cook salmon until fish flakes easily with a fork, about 6 to 8 minutes per side.

Grilled Corn Salad

  1. Cook the corn in a pot of boiling water for 10 minutes.

  2. Drain then brush with olive oil and grill in a hot grill pan (or over hot coals).

  3. Remove and allow to cool for 10 minutes then slice the kernels off the cobs.

  4. Combine the grilled corn kernels with the remaining salad ingredients.

  5. Dress with olive oil, lemon juice, salt and pepper and mix to combine.
