The 2023 Suavia Soave Classico Monte Carbonare DOC is a critically acclaimed 100% Garganega white wine that serves as a benchmark for Italy's volcanic terroir. Produced by the Tessari sisters from a 6-hectare single vineyard on the Monte Carbonare hill, the vines—averaging 60 years in age—are grown in deep, black basalt soils that resemble coal, a feature that directly informs the wine's signature "smoky and sulphurous" flint personality. In the cellar, this organic wine is fermented in stainless steel for 16 days at 14–16°C and specifically avoids malolactic fermentation to preserve its sharp, vibrant acidity and saline freshness. It undergoes an extensive maturation period, aging for 12–15 months on fine lees in steel followed by 6 months in the bottle, resulting in a "creamy and elegant" palate with persistent notes of citrus, mountain herbs, and white flowers. The 2023 vintage is highly regarded by critics, earning top scores such as 95 points from James Suckling and 94 points from Falstaff, noted for its "tense, savory finish" and aging potential beyond 2030.
