Some dishes are weeknight heroes. Deana T.'s Turkey Taco Stuffed Sweet Potatoes are exactly that — a dish that feels indulgent, tastes incredible, and comes together faster than you'd expect.

The Recipe: Deana's Turkey Taco Stuffed Sweet Potatoes

What makes this recipe work is the contrast. The sweet potato brings natural sweetness and a creamy, velvety texture. Ingredients

  • 2 medium sweet potatoes
  • ¾ pound lean ground turkey
  • 4 garlic cloves, minced
  • 1¼ teaspoons cumin
  • Chili powder, to taste
  • Oregano, to taste
  • Paprika, to taste
  • Crushed tomatoes
  • Pepper Jack cheese, shredded
  • Olive oil
  • Salt and pepper
  • Fresh parsley, for garnish

Instructions

  1. Bake sweet potatoes at 400°F for 45–60 minutes (or microwave on high for 8–10 minutes) until completely tender.
  2. Once cool enough to handle, slice open and scoop out most of the flesh, leaving a thin shell. Mash the flesh with olive oil, salt, and pepper.
  3. In a skillet over medium heat, cook ground turkey with garlic, cumin, chili powder, oregano, and paprika until browned and cooked through.
  4. Add crushed tomatoes and simmer for 5–7 minutes until the sauce thickens.
  5. Fill each potato skin with the mashed sweet potato mixture, then top generously with the turkey filling.
  6. Top with shredded Pepper Jack cheese and broil for 2–3 minutes until melted and bubbly.
  7. Garnish with fresh parsley and serve immediately.
